1 spring onion.

Salt (1/2 teaspoon), oil (2 tablespoons).

Methods
- Prepare a bowl of cooked rice ( better use leftover cold rice);
- Chop the spring onion into small pieces.

- Separate egg yolks from egg whites;
- Place 2 egg yolks to the rice bowl.

- Mix egg yolks with the rice thoroughly;
- Egg whites can be cooked separatly then added to the fried rice later or simply served as a side dish.

- Add oil to a pan;
- Add the spring onion and give it a few stirs;
- Add the rice and keep stirring.

- Add salt;
- Cook the rice until clumps of rice start to relax and grains of rice become separate.
