Leftover cooked rice (1 bowl ≈ 200 grams), 2 eggs.

Ingredients (Optional)

Seasonings

Salt (1/2 teaspoon), oil (2 tablespoons).

Adjust the ingredient quantities to fit your needs.

Methods

  • Prepare a bowl of cooked rice ( better use leftover cold rice);
  • Chop the spring onion into small pieces.

  • Separate egg yolks from egg whites;
  • Place 2 egg yolks to the rice bowl.

  • Mix egg yolks with the rice thoroughly;
  • Egg whites can be cooked separatly then added to the fried rice later or simply served as a side dish.

  • Add oil to a pan;
  • Add the spring onion and give it a few stirs;
  • Add the rice and keep stirring.

  • Add salt;
  • Cook the rice until clumps of rice start to relax and grains of rice become separate.
