sliced bread, 1 egg, 1 cheese slicebacon (1 piece or 2 short-cuts), 1 whole spinach.

Hollandaise sauce (1/8 cup ≈ 25 g), black pepper (1 teaspoon).

Methods

  • Prepare 1 slice of bread, 1 egg, 1 slice of cheese, and 2 short-cuts of bacon;
  • Wash clean the spinach.

  • Crack an egg into a bowl.

  • Boil enough water in a saucepan;
  • Add a tablespoon light vinegar to the saucepan (optional);
  • Use a ladle to swirl the boiling water.

  • Carefully drop the egg into the swirling vortex of water.

  • Cook the egg for 2-4 minutes depending on the level of firmness;
  • Then carefully scoop out the poached egg.

  • Fry the bacon in a pan.

  • Blanch the spinach for 1 minute in the same boiling water used for poached egg;
  • Take it out and drain the water.

  • Place the cheese slice on top of the bread slice;
  • Preheat the oven at 180 °C (356 F);
  • Put the whole thing in the oven and bake for 3 minutes.

  • Place bacon, spinach, and poached egg on top of baked toast;
  • Pour some Hollandaise sauce on top of it;
  • Sprinkle some black pepper on top of the sauce.
